Cotton Candy Cake: A Whimsical Treat for Every Occasion

Ingredients

For the Cake:
2 ½ cups all-purpose flour
1 tbsp baking powder
½ tsp salt
1 cup unsalted butter (room temperature)
1 ¾ cups granulated sugar
4 large eggs
2 tsp vanilla extract
1 ½ cups whole milk
2 tsp cotton candy flavoring

For the Cotton Candy Frosting:
1 cup unsalted butter (room temperature)
4 cups powdered sugar
2-3 tbsp heavy cream
1 tsp cotton candy flavoring
Pink and blue food coloring


Instructions

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla and cotton candy flavoring.
  5. Alternately add the dry ingredients and milk, mixing until just combined.
  6. Divide the batter into two bowls. Add pink food coloring to one and blue food coloring to the other.
  7. Pour both batters into the cake pans in a swirling pattern for a marbled effect.

Step 2: Bake the Cake

  1. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  2. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 3: Make the Frosting

  1. Beat butter until creamy. Gradually add powdered sugar.
  2. Add cotton candy flavoring and heavy cream, beating until fluffy.
  3. Divide frosting into two bowls, coloring one pink and one blue.

Step 4: Assemble & Decorate

  1. Spread a layer of frosting between the cake layers.
  2. Frost the outside, blending pink and blue for an ombré effect.
  3. Top with cotton candy and sprinkles for a magical finish!

Notes

Use Gel Food Coloring: It gives vibrant colors without changing the batter’s texture.
Add Cotton Candy at the Last Minute: It melts quickly, so decorate right before serving.
Chill the Cake Before Frosting: This prevents crumbs from mixing into the frosting.
Experiment with Flavors: Try vanilla or strawberry in addition to cotton candy.
